Easy Cranberry Apple Salad

Easy side dishes are my favorite ones- the easier the better! They bring a meal together without requiring a lot of your time and attention. This Easy Cranberry Apple Salad in one of the quickest recipes I’ve ever had the pleasure of making. The name truly says it all with this yummy salad and it only takes a few minutes to prepare.

The trick to making this salad a breeze is some vanilla yogurt. For this recipe I used the French style yogurt that’s a bit thinner. This helps coat each piece of fruit.

This salad has elements that resemble a Waldorf salad, but also an ambrosia salad. But, here the yogurt stands in for the dressing instead of mayo or Cool Whip. It’s not only super tasty, but it’s also a healthier take on this type of dish. Savory elements from the celery and nuts and sweet elements from the fruit and the yogurt make this a salad that easy to enjoy.

Mix the apples with the yogurt and some lemon juice to make sure they don’t turn brown. You can use any kind of apple you’d eat raw for this recipe. I particularly love the Honeycrisp and Cosmic apples, but Granny Smith can lend a nice tartness to the salad if that’s more to your taste.

Then all that’s left to do is to mix the apples with the rest of the ingredients. You can add different dried fruits or nuts as you see fit.

Just 7 ingredients and you’re ready to dig in. It really is the one of the simplest salads you can make!
