Pecan Turtle Bars Recipe

  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 16 ounces Cool Whip, thawed (divided)
  • 1 teaspoon vanilla extract
  • 1/3 cup chocolate sauce (plus more to garnish)
  • 1/3 cup caramel sauce (plus more to garnish)
  • 1 cup chopped pecans (divided)
  • 1 cup mini semi-sweet chocolate chips (divided)
  • 1820 vanilla ice cream sandwiches

Instructions

  1. Prepare Cream Cheese Mixture:
    • In a large mixing bowl, cream together the softened cream cheese and powdered sugar until smooth and fully blended, ensuring no lumps.
  2. Blend in Additional Ingredients:
    • Fold in half of the Cool Whip, vanilla extract, chocolate sauce, and caramel sauce. Blend for about 2 minutes until fully combined and the mixture is a pale shade of brown.
  3. Add Pecans and Chocolate Chips:
    • Add the chopped pecans and mini chocolate chips, reserving a handful of each for garnishing. Use a rubber spatula to combine fully, scraping down the edges of the bowl.
  4. Layer Ice Cream Sandwiches:
    • In the bottom of a 9×13 baking dish, lay half of the ice cream sandwiches flat and side by side.
  5. Add Cream Cheese Mixture:
    • Pour the cream cheese mixture over the first layer of ice cream sandwiches and spread evenly using a rubber spatula.
  6. Second Layer of Ice Cream Sandwiches:
    • Add another layer of ice cream sandwiches on top of the cream cheese mixture, using the same pattern as the first layer.
  7. Top with Remaining Cool Whip:
    • Spread the remaining tub of Cool Whip evenly over the top layer of ice cream sandwiches.
  8. Freeze the Cake:
    • Cover the cake with plastic wrap and place it in the freezer for at least 6 hours or overnight before serving.
  9. Garnish and Serve:
    • When ready to serve, sprinkle the top of the cake with the reserved chocolate chips and pecan pieces. Drizzle additional chocolate and caramel sauce over the top.
    • Cut with a knife and a metal spatula to serve.
